Faubourg Tall Boy

Faubourg is old French for “fortress,” and it’s what we call our neighborhoods here in New Orleans. I live in the Faubourg Treme and I like to make up a tasty refreshing drink like this when I join in on the second lines. This drink is actually a combination of my dad’s favorite drink, a Tom Collins, and my mom’s favorite drink, a Kir Royale. The tea infusion is real quick and easy. Just soak 4 bags of Earl Grey tea per one liter of gin for about 6 to10 minutes.
- 1 1/2 oz. Earl Grey infused gin
- 1/2 oz. crème de cassis
- 1/2 oz. fresh lemon juice
- 1/2 oz. simple syrup
- top with cava or sparkling wine
- garnish: lemon wheel
Shake all ingredients but the wine in a shaker filled with ice. Strain and pour over fresh ice in a Collins glass and top with sparkling wine. Add a lemon wheel.
