East Indies Collins

  • 1 kiwi
  • 1 oz. kiwi juice
  • 1/2 oz. lemon/lime syrup
  • 1/2 oz. lime juice
  • 1 1/2 oz. kaffir – infused organic gin (break 20 leaves of kaffir; let infuse 24 hours in a bottle of gin at room temperature)
  • 1/2 oz. green chartreuse
  • 2 oz. chilled organic green tea
  • Julienne of kaffir leaves (for garnish)
    In a mixing glass, muddle the kiwi; add all the other ingredients; add ice, shake, pour directly in a highball glass. Garnish with the julienne of kaffir leaves.
