Clarified orange juice:
- 900ml orange juice, freshly squeezed
- 100ml water
- 2g agar-agar, dissolved in cold water
Bring water to a boil in large pot; remove from heat; slowly drizzle in juice while whisking; add agar-agar; set pot in ice bath; once fully set, whisk gel to break apart completely; pour gel into Superbag; hang bag, allowing clarified juice to drip out.
- 2 oz. Beefeater gin
- 0.5 oz. Antica
- 0.5 oz. Dolin Dry vermouth
- 1 dash wormwood bitters
- orange twist, for garnish
Combine all ingredients except orange twist with 1 oz. clarified orange juice in bar glass; stir; strain into a coupe; serve up, garnished with orange twist.
