Disco Daiquiri Jello Shot

Lemon/lime syrup:

  • 5 lemons, zested
  • 3 limes, zested
  • 5 oz. granulated sugar
  • 5 oz. hot water

Mix zests with sugar; add water; stir until dissolved; strain through fine sieve; reserve.


  • 4 packets (28g) Knox Gelatin
  • 4 oz. lime juice
  • 8 oz. boiling water
  • 8 oz. white rum (Caña Brava)
  • 8 oz. overproof white rum (Wrey and Nephew)

Bloom gelatin in lime juice; add 4 oz. lemon/lime syrup to help disperse gelatin; add boiling water; stir until all the gelatin dissolves; add 4 oz. more lemon/lime syrup and rums; pour into 1 oz. serving glasses or into larger container; reserve in refrigerator until set; if using larger container, cut into 1 oz. servings.
