Clarified pineapple juice:
- 100ml water
- 900ml pineapple juice
- 2g agar-agar, dissolved in cold water
Bring water to a boil in large pot; remove from heat; slowly drizzle in juice while whisking; add agar-agar; set pot in ice bath; once fully set, whisk gel to break apart completely; pour gel into Superbag; hang bag, allowing clarified juice to drip out.
- Absolut Citron
- simple syrup (1:1 sugar to water)
Fill 1L iSi canister to fill line with cranberries; pour citron over top to fill line; double charge with N2O; reserve 5 minutes; vent out all gas with the nozzle facing up, covered with a cup and set over a container; open iSi and allow all the N2O to vent; close iSi; place in stockpot of boiling water about 1 hour; place canister in ice bath; when cool, strain and discard cranberries; reserve liquid.
Add 1 oz. simple syrup for every 4 oz. cranberry/vodka; add 1.5 oz. clarified pineapple juice to every 1 oz. of cranberry/vodka.
Pour cordial into 1L PET bottles with carbonator cap; chill to -4.5ºC (23.9°F); carbonate at 45PSI.
- 2 oz. Malibu rum
- pineapple spear, for garnish
Pour rum into Collins glass; top with cranberry cordial soda; garnish with pineapple spear.
