Tropical Spinach

Farmer Lee Jones / February 8th, 2012

Growing abundantly in cooler, mountainous regions of South America, the native uses of tropical spinach are similar to that of conventional spinach. The sturdiness of the stem and the striking color reminded us of an exotic plant from the rainforest, which led to its name.

It adds an incredible touch to any plate. As you can see, Wolfgang Puck and his team incorporated it into this dish, which was served at the epic Academy Awards after-party, The Governor’s Ball. One delicate sprig provided contrast to the other flower-like components to create a lovely garden on the plate.
