New Orleans—John Folse is celebrating the 10th anniversary of his Encyclopedia of Cajun & Creole Cuisine by making the 10 pound tome available on electronic readers for $29.95.
The e-book is available on Nook, Amazon Kindle, and Apple devices. “So many folks value the beauty of the book they don’t want to drip roux or shrimp juice on it when they have it in the kitchen,” Folse says.
The volume contains 700 recipes as well as a wealth of historical information covering the seven nations that contributed to Louisiana foodways.
