Fish & Chips

- vegetable or peanut oil, for frying
- 1 1/4 cups rice flour
- 1 1/4 cups all-purpose flour
- 2 tsps. baking powder
- 2 1/2 cups vodka
- 1 cup Guinness
- 1/2 cup Miller Light
- 1 lb. cod, cut into 4 4-oz. portions
- French fries, lemon wedges, and tartar sauce, for serving
Heat oil to 375˚F.
Mix dry ingredients together in bowl; whisk in vodka, Guinness, and Miller Light, keeping batter cold.
Dip cod into batter, making sure it’s covered; drop into hot oil; fry 4 to 5 minutes; remove from oil; place on paper towel to drain excess oil; serve with side of fries, lemon wedges, and tartar sauce.
