Fish & Chips

Serves 4

  • vegetable or peanut oil, for frying
  • 1 1/4 cups rice flour
  • 1 1/4 cups all-purpose flour
  • 2 tsps. baking powder
  • 2 1/2 cups vodka
  • 1 cup Guinness
  • 1/2 cup Miller Light
  • 1 lb. cod, cut into 4 4-oz. portions
  • French fries, lemon wedges, and tartar sauce, for serving
  1. Heat oil to 375˚F.

  2. Mix dry ingredients together in bowl; whisk in vodka, Guinness, and Miller Light, keeping batter cold.

  3. Dip cod into batter, making sure it’s covered; drop into hot oil; fry 4 to 5 minutes; remove from oil; place on paper towel to drain excess oil; serve with side of fries, lemon wedges, and tartar sauce.
