Pimento Cheese

Yields 2 1/2 cups

  • 5 lg. roasted red peppers, peeled, seeded, and chopped
  • 1 cup stuffed green olives, finely chopped
  • 1 1/4 lb. New York or Vermont sharp white cheddar cheese, grated
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup mayonnaise
  • 1 Tbsp. parsley, chopped
  • 1/2 tsp. black pepper, freshly ground
  • 1/8 tsp. cayenne pepper

Combine all ingredients in mixing bowl; mix well; season with cayenne pepper; refrigerate until ready to serve.
