Andalucia Gazpacho

Fig & Olive, West Hollywood, California, Pascal Lorange - July 23rd, 2014

Serves 4

  • 2 lbs. tomatoes
  • 1/4 lb. red bell pepper, halved and seeds removed
  • 2 tsps. cumin
  • 1 oz. Sherry vinegar
  • 2 oz. bread
  • 1 hothouse cucumber, peeled
  • 1 tsp. Tabasco pepper sauce
  • 2 cups water
  • 4 oz. Spanish onions
  • 1/3 cup olive oil
  • 1 tsp. salt

Blend all ingredients in food processor; season; transfer to refrigerator; chill until ready to serve.
