Frites, Anne de la Forest - July 31st, 2014
- 400g (14 oz.) feta cheese, cut into sticks about 1 cm (.39 in.) wide
- 2 Tbsps. all-purpose flour
- 2 lg. eggs
- 3 Tbsps. dried bread crumbs
- table salt
- black pepper, freshly ground
- 2L (8 cups) cooking oil
Chef’s Note: Leave feta in the fridge until the last minute so it remains nice and firm.
Place flour into dish; beat eggs into second dish; mix bread crumbs with pinch of salt and pepper in third dish; reserve.
Heat fryer to 170˚C (338˚F); dip feta sticks in flour, followed by egg, and then bread crumbs; place carefully in fryer basket; lower in oil; cook 3 minutes; drain; place on large plate covered with paper towels; remove paper towels; season; serve immediately.
